There’s nothing quite like good branding on a T Shirt. We were out on a stroll and found ourselves walking behind this guy who was giving his a daughter a run and some fresh air at Ben Buckler, and The Bondi Brewing Co. logo caught our eye.
Meet Paul Parks and daughter Billie Rose.
Paul started the Bondi Brewing Company out of his garage on Hastings Parade about 4 years ago.
Paul was passionate about brewing beer so one thing lead to another and before he knew it his hobby had turned into a full blown “career and dedicated craft.”
Paul moved to Bondi about 15 years ago and has lived in several places but always on Ben Buckler (when we told him we live just on the other side of Campbell Parade he said “oh, so you mean West Bondi!”
He lives with his wife Emily and 2 year old Billie Rose.
Brewing beer and spending time with loved ones is what keeps Paul going.
We asked him how is day starts and this is what he said: “I wake up at 5:00 everyday and spend the first hour reconciling Xero, setting up my day and order runs, and deleting spam from my inbox. Pretty boring. Then I play with Billie for a little bit before I either head to the garage to brew a recipe, visit customers or pop down to Rancho or Prom to bust out some emails”. The Rancho and Prom he refers to are the new ventures that Paul and his beer company are involved in. Rancho Seltzo on the corner of Campbell Parade and Beach Road, and Promenade Bondi Beach is beach facing in the newly renovated Pavilion.
If you’re wondering about the Two Weeks sign in his garage, it refers to a scene in Total Recall and also, by the way, the time it takes for a beer to brew.
Paul is a “patrolling North Bondi Surf Club member, beach bum, local guy” who loves the place and will live here until the day he dies.
